LalBrew Pomona™ is a hybrid yeast selected for flavor and fermentation performance in hoppy beers. Named after the goddess of fruit trees, LalBrew Pomona™ produces a unique and juicy flavor profile with notes of peach, citrus, and tropical fruits. Our partner Escarpment Laboratories (Canada) developed this strain using advanced yeast breeding and adaptive laboratory evolution in high ABV and highly hopped IPA fermentations. The result is a fruity, stress-tolerant, and robust strain that enhances biotransformation and haze for modern IPA styles.

    LalBrew Pomona is something else, the speed at which it reached terminal gravity and maintained a clean quality fermentation was impressive. it had an incredible mouth feel, haze retention and stability, I will definitely be using it again for any hazy IPA.

We have found that it gives repeatable and highly predictable results whilst thriving in our hazy IPAs and giving extra depth to our kettle sours. It consistently provides a heightened ester profile of bright citrus, stone fruit and elevates our hop profiles to be direct and punchy whilst maintaining a very stable and glowing haze.
